In honor of Valentines Day, I thought a candy recipe would be timely and helpful if you are still trying to figure out how to celebrate celebrate those you love. In fact, this is fun (and much faster) to do as a group so you could even gather your kids, grandkids, spouse or friends and make these as a fun Valentine activity. This family recipe comes from my wife's family who used to make these every Christmas season while growing up. We hope you enjoy them as much as we do!
Note: If you are allergic to peanuts you could also do this with almond butter, sunflower seed butter or any other nut variation.
Peanut Butter Balls
2 cups graham cracker crumbs (for gluten-free substitute rice krispies)
3/4 cups old fashioned peanut butter
1 lb powdered sugar
1 cup butter or margarine
Mix all ingredients together with your hands and form into balls. Melit 12 oz chocolate chips with 1/4 stick of parawax over double broiler*. Let cool on wax paper or heavily buttered cookie sheet. Makes approximately 75 balls.
* If you do not have a double broiler you can use a glass bowl set inside a pot. Make sure there is water in the bottom of the pot and the glass bowl is large enough so it doesn't touch the bottom of the pot but is very close. Dip balls into chocolate using a toothpick.
